RECIPE:

Prep time: 15 minutes
Baking time: 1 hour
Total: 1 hour 15 minutes

2 ripe bananas (300g weight with peel)
150g (3/4 cup) soft unsalted butter
150g (3/4 cup) sugar
2 eggs (room temperature)
1 tsp vanilla extract
240g (2 cups) plain flour
2 tsp baking powder
1/4 tsp salt
1/2 tsp ground cinnamon
150g (1 cup) raisins
you can also add 150g (1 cup) walnuts

Bake in a preheated oven at 180C / 345F / Gas mark 3.
Baking time: 1 hour, or until toothpick comes out clean.
After 30 minutes of baking cover it with foil loosely if the cake is getting brown but it's not ready yet.
Every oven is different, cooking times may vary slightly, keep checking it every 5 minutes after 1 hour and 10 minutes of baking.
